Ingredients
- 180 g Pasta (penne or spaghetti)
- 1 large Avocados
- 2 tbsp Lime juice
- 1 tsp Lime zest
- 1 cup Corn kernels (fresh or frozen)
- 1 tbsp Olive oil
- 1/2 tsp Chili powder
- 1/2 tsp Kosher salt
- 1/4 tsp Black pepper(optional)

Bring a pot of salted water to a boil. Cook the pasta until al dente according to package directions (about 10 minutes). Reserve 1/2 cup pasta water, then drain.

While the pasta cooks, char the corn: heat olive oil in a skillet over medium-high heat, add corn, and cook 5 minutes, stirring occasionally, until browned in spots.

In a bowl, mash the avocado with lime juice and lime zest until mostly smooth. Stir in chili powder and salt.

Add drained pasta to the avocado-lime mixture and toss, loosening with a splash of reserved pasta water as needed until creamy. Fold in the charred corn and season with black pepper if using. Serve immediately.
