- 300 g Pulled pork (smoked)
- 4 sheets Lasagna noodles (no‑boil)
- 1/2 cup Barbecue sauce
- 1 cup Shredded mozzarella cheese
- 1/2 cup Shredded cheddar cheese
- 1/2 cup Ricotta cheese
- 1 tbsp Olive oil
- 1/4 tsp Salt
- 1/4 tsp Black pepper
Instructions
- 1
Preheat the oven to 190°C (375°F). Lightly grease a 9‑inch baking dish with olive oil.
- 2
In a skillet over medium heat, add the pulled pork and barbecue sauce; stir and heat for 5 minutes until the mixture is glossy.
- 3
Spread a thin layer of the pork‑BBQ mixture on the bottom of the dish, then place two lasagna sheets over it.
- 4
Spread the ricotta cheese evenly over the noodles, then add half of the remaining pork‑BBQ mixture, followed by half of the mozzarella and cheddar cheeses.
- 5
Repeat with another layer of lasagna sheets, the remaining ricotta, pork mixture, and cheeses.
- 6
Top with the final two lasagna sheets and sprinkle any remaining mozzarella and cheddar on top.
- 7
Cover the dish tightly with foil and bake for 35 minutes. Remove the foil and bake an additional 20 minutes until the cheese is golden and bubbly.
- 8
Let the lasagna rest for 10 minutes before slicing and serving.
