Ingredients

  • 12 oz boneless skinless chicken breast
  • 2 cups bell peppers (mixed colors), sliced
  • 1 cup yellow onion, sliced
  • 2 tsp fajita seasoning
  • 1 tbsp olive oil
  • 1 tbsp lime juice(optional)
  • 4 small flour tortillas

Instructions

    Prep (15 minutes): Slice the bell peppers and onion. Cut the chicken into thin strips.

    Cook (20 minutes): Heat olive oil in a large skillet over medium-high heat. Add onion and bell peppers and sauté until slightly softened, about 8 minutes.

    Add fajita seasoning to the skillet and stir to coat the vegetables. Add the chicken strips and cook, stirring occasionally, until browned and cooked through, about 12 minutes.

    Finish: Stir in lime juice (if using). Serve the chicken fajita mixture in warm tortillas.
