Ingredients

  • 1.5 lbs Boneless skinless chicken thighs
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 4 cloves Garlic cloves, minced
  • 2 tbsp Shawarma spice blend (cumin, coriander, turmeric, paprika)
  • 4 pieces Large pita breads or flatbreads
  • 0.5 cup Tahini or Garlic sauce (Toum)
  • 1 cup Sliced cucumbers and tomatoes
  • 0.5 cup Pickled turnips or gherkins(optional)
  • 0.5 small Red onion, thinly sliced

Instructions

    In a large bowl, whisk together olive oil, lemon juice, minced garlic, and the shawarma spice blend.

    Slice chicken thighs into thin strips and toss in the marinade; let sit for at least 30 minutes or overnight.

    Heat a large cast-iron skillet over medium-high heat and add the chicken in a single layer.

    Sear the chicken for 8-10 minutes, stirring occasionally, until browned, crispy on the edges, and cooked through.

    Warm the pita breads in a dry pan or oven until soft and pliable.

    Spread a generous layer of garlic sauce or tahini down the center of each pita.

    Layer the cooked chicken, tomatoes, cucumbers, onions, and pickles on top of the sauce.

    Roll the pita tightly, wrap the bottom in foil to hold it together, and serve immediately.
