Ingredients

  • 4 pieces Large flour tortillas
  • 8 pieces Large eggs
  • 1/2 lb Breakfast sausage links or bulk
  • 1 large Russet potato, diced small
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Whole milk
  • 1 tablespoon Butter
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt and black pepper
  • 1/2 cup Fresh salsa(optional)
  • 1 medium Diced avocado(optional)

Instructions

    Heat vegetable oil in a large skillet over medium-high heat and fry the diced potatoes until golden brown and crispy, about 10-12 minutes.

    In a separate skillet, cook the breakfast sausage over medium heat until fully browned and crumbled; drain any excess fat.

    Whisk the eggs, milk, salt, and pepper in a bowl until well combined.

    Melt butter in a non-stick pan over medium-low heat and pour in the egg mixture, stirring gently until soft curds form.

    Warm the flour tortillas in a dry pan or microwave for 15 seconds to make them pliable.

    Layer the center of each tortilla with equal portions of crispy potatoes, cooked sausage, scrambled eggs, and shredded cheese.

    Fold in the sides of the tortilla and roll tightly from the bottom up to seal the burrito.

    Optional: Place the rolled burritos seam-side down in a hot skillet for 1 minute to crisp the exterior and melt the cheese further.
