Ingredients

  • 12 oz Shrimp, peeled and deveined
  • 8 oz Pasta (penne or linguine)
  • 1 tbsp Chipotle in adobo sauce, minced
  • 1/2 cup Heavy cream
  • 1/2 cup Chicken or vegetable broth
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 2 tbsp Lime juice
  • 1 tsp Lime zest(optional)
  • 1/2 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)

Instructions

    Bring a large pot of salted water to a boil. Cook the pasta until al dente, then reserve 1/2 cup of pasta water and drain.

    While the pasta cooks, heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds, then stir in the minced chipotle.

    Add shrimp to the skillet and cook until pink and just cooked through, about 3–4 minutes. Stir in broth and simmer 2 minutes to reduce slightly.

    Lower heat and stir in heavy cream. Simmer gently for 2–3 minutes, then add pasta and toss to coat. Add a splash of reserved pasta water if needed to loosen the sauce.

    Turn off the heat and stir in lime juice (and lime zest if using). Taste and adjust with salt and black pepper. Serve immediately.
