Ingredients

  • 400 g extra-firm tofu
  • 2 tbsp cornstarch
  • 2 tbsp neutral oil (for frying)
  • 3 cloves garlic
  • 1 tsp Thai chili or red chili flakes
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce (or soy sauce substitute)(optional)
  • 1 tsp brown sugar
  • 1 tbsp lime juice
  • 1 cup Thai basil (or sweet basil)
  • 1 tbsp water(optional)

Instructions

    Press tofu for a few minutes, then cut into bite-size cubes. Toss tofu with cornstarch until evenly coated.

    Heat a large skillet over medium-high heat. Add oil and pan-fry tofu, turning occasionally, until deeply golden and crisp, about 12–15 minutes.

    While tofu cooks, mince garlic and prepare a quick sauce by mixing soy sauce, fish sauce (if using), brown sugar, and lime juice (and water if you want a slightly looser sauce).

    Add garlic and chili to the skillet and stir for 30–60 seconds until fragrant. Pour in the sauce and toss to coat the tofu, about 5 minutes.

    Turn off heat and fold in Thai basil just until wilted, about 1–2 minutes. Serve immediately.
