Ingredients

  • 12 oz boneless, skinless chicken breast
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 3 cloves garlic
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes
  • 6 oz mozzarella
  • 0.25 cup fresh basil

Instructions

    Prep (10 minutes): Slice the chicken into cutlets or thin pieces. Mince the garlic. Halve the cherry tomatoes and roughly chop the basil.

    Cook (20 minutes): Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until browned and cooked through, 6–8 minutes per side (or until the thickest part reaches 165°F/74°C). Transfer to a plate.

    In the same skillet, reduce heat to medium. Add butter and garlic and sauté until fragrant, about 30–60 seconds.

    Add tomatoes to the skillet and cook until they start to burst and release juices, 5–7 minutes. Return chicken to the skillet and spoon the garlic-butter tomato mixture over it.

    Sprinkle mozzarella over the chicken and tomatoes. Cover the skillet until the cheese melts, 2–4 minutes. Turn off heat, top with basil, and serve.
