- 2 pounds bone-in, skin-on chicken thighs
- 0.25 cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1.5 teaspoons kosher salt
- 0.5 teaspoon cracked black pepper
- 1 whole lemon slices(optional)
- 2 tablespoons fresh parsley, chopped(optional)

Preheat your oven to 425°F (220°C) and lightly grease a large rimmed baking sheet or baking dish.

Pat the chicken thighs dry with paper towels to ensure the skin gets crispy during roasting.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.

Place the chicken thighs in a large bowl and pour the marinade over them, tossing to coat every piece thoroughly.

Arrange the chicken on the prepared baking sheet skin-side up, tucking lemon slices between the pieces if using.

Roast in the center of the oven for 30 to 35 minutes, or until the internal temperature reaches 165°F.

Turn on the broiler for the last 2-3 minutes if you prefer extra golden, crispy skin.
