Ingredients

  • 12 oz chicken breast
  • 2 cups bell peppers (mixed colors), sliced
  • 1/2 cup onion, sliced
  • 2 tsp fajita seasoning
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 2 tbsp cilantro, chopped(optional)
  • 6 oz pasta (penne or fettuccine)
  • 1/4 tsp salt(optional)
  • 1/4 tsp black pepper(optional)

Instructions

    Bring a pot of salted water to a boil and cook the pasta until al dente (about 10–12 minutes). Reserve 1/2 cup pasta water, then drain.

    While the pasta cooks, slice the chicken into thin strips. Heat olive oil in a large skillet over medium-high heat and sauté chicken with fajita seasoning, salt, and black pepper until cooked through (about 6–8 minutes).

    Add onion and bell peppers to the skillet and sauté until crisp-tender (about 4–6 minutes). Stir in garlic for 30 seconds.

    Add drained pasta to the skillet and toss to combine. Add a splash of reserved pasta water if needed to loosen the sauce, then finish with lime juice and cilantro. Serve immediately.
