Ingredients

  • 12 oz boneless skinless chicken thighs
  • 2 tbsp lime juice
  • 2 tbsp orange juice
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 3/4 cup long-grain white rice
  • 1.5 cups water
  • 1/2 cup cilantro (chopped)
  • 1 tsp lime zest
  • 1/2 cup salsa

    Prep (15 min): In a bowl, mix lime juice, orange juice, minced garlic, cumin, oregano, chili powder, salt, black pepper, and olive oil. Add chicken and toss to coat.

    Cook rice while chicken cooks (20 min total cook time): Rinse rice, then add to a small pot with water. Bring to a boil, reduce to a simmer, cover, and cook until tender (about 15 minutes). Turn off heat and fluff; stir in cilantro, lime zest, and a squeeze of lime juice if desired.

    Cook chicken (20 min total cook time): Heat a grill or large skillet over medium-high heat. Cook chicken 6–8 minutes per side (or until cooked through). Rest 3 minutes, then slice.

    Serve: Plate cilantro-lime rice, top with sliced pollo asado, and spoon salsa over the chicken.
