- 100 grams Pancetta
- 2 units Large Eggs
- 50 grams Pecorino Romano Cheese
- 1 teaspoon Black Pepper
- 1 pinch Salt(optional)
Instructions
- 1
Bring a large pot of salted water to a boil and cook the spaghetti for 8-10 minutes until al dente.

While the pasta cooks, fry the diced pancetta in a large skillet over medium heat for 5 minutes until crispy.
- 3
In a small bowl, whisk the eggs and finely grated Pecorino Romano together until well combined.
- 4
Reserve 1/2 cup of pasta water, then drain the spaghetti and add it to the skillet with the pancetta, removing from heat immediately.

Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously and adding splashes of pasta water as needed to create a creamy sauce without scrambling the eggs.
