Ingredients

  • 1.5 lbs Flank steak, thinly sliced against the grain
  • 1 cup Roasted salted peanuts, finely crushed
  • 3 tbsp Soy sauce
  • 2 tbsp Red curry paste
  • 0.25 cup Coconut milk
  • 1 tbsp Brown sugar
  • 1 tbsp Fresh ginger, grated
  • 3 cloves Garlic, minced
  • 1 tsp Sriracha or chili flakes
  • 1 tbsp Lime juice
  • 2 tbsp Fresh cilantro, chopped(optional)
  • 12 pieces Wooden skewers, soaked in water

Instructions

    In a large bowl, whisk together soy sauce, red curry paste, coconut milk, brown sugar, ginger, garlic, and lime juice.

    Add the sliced beef to the marinade, tossing to coat thoroughly, and refrigerate for at least 30 minutes.

    Thread the marinated beef strips onto the soaked wooden skewers in a zigzag pattern.

    Spread the finely crushed peanuts on a flat plate or shallow dish.

    Press each beef skewer firmly into the crushed peanuts, ensuring both sides are well-coated with the peanut crust.

    Preheat a grill pan or outdoor grill to medium-high heat and lightly oil the grates.

    Grill the skewers for 3-4 minutes per side until the beef is cooked through and the peanut crust is toasted and golden.
