Ingredients
- 1/2 lb Sashimi-grade yellowfin tuna, cubed
- 2 cups Sushi rice, cooked and seasoned
- 4 sheets Nori seaweed sheets, halved
- 2 tbsp Kewpie mayonnaise
- 1 tbsp Sriracha sauce
- 1/2 tsp Toasted sesame oil
- 2 stalks Green onions, finely sliced
- 1/2 cup Cucumber, julienned
- 1 tsp Toasted sesame seeds(optional)
- 2 tbsp Soy sauce for dipping(optional)
- 1 tsp Wasabi paste(optional)
Instructions

Prepare the sushi rice and allow it to cool to room temperature before handling.

Finely dice the sashimi-grade tuna into 1/4 inch cubes and place in a chilled mixing bowl.

In a small bowl, whisk together the Kewpie mayo, Sriracha, and sesame oil to create the spicy sauce.

Gently fold the spicy sauce and half of the sliced green onions into the tuna until evenly coated.

Hold a half-sheet of nori in your palm (rough side up) and spread a thin layer of rice over the left third of the sheet.

Place a spoonful of the spicy tuna mixture and a few cucumber strips diagonally across the center of the rice.

Fold the bottom left corner of the nori over the filling and continue rolling into a cone shape.

Seal the edge with a single grain of mashed rice and garnish the top with sesame seeds and remaining green onions.
