Ingredients

  • 300 g Ground Beef
  • 8 Eggs
  • 1 cup Thai Basil
  • 3 Bird's Eye Chilies
  • 2 tbsp Fish Sauce
  • 4 cloves Garlic
  • 1 tbsp Lime Juice

Instructions

    Sauté garlic and chilies, add beef and brown. Stir in fish sauce and basil until wilted. Set aside.

    Beat eggs with a splash of fish sauce and lime juice until very frothy.

    Heat a generous amount of oil in a wok until shimmering.

    Pour eggs from a height to create a lacy, crispy texture.

    Place the beef mixture in the center and fold the omelette over.

    Drain on paper towels before serving.
