Ingredients

  • 250 g ground chicken
  • 1/2 cup Thai basil (or regular basil)
  • 2 cloves garlic
  • 1 tsp red chili (or chili flakes)
  • 1.5 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 1 tbsp neutral oil (for cooking)
  • 8 cups romaine or butter lettuce leaves
  • 2 tbsp water(optional)
  • 1 tsp cornstarch(optional)

Instructions

    Prep (10 minutes): Mince the garlic. Chop the basil (leave small leaves whole if using regular basil). Juice the lime. Rinse and pat dry the lettuce leaves; set aside.

    Cook (14 minutes): Heat oil in a skillet over medium-high heat. Add garlic and chili; stir 30 seconds until fragrant. Add ground chicken and cook, breaking it up, until no longer pink, about 8–10 minutes.

    Finish filling: Stir in soy sauce, fish sauce, brown sugar, and lime juice. If you want a thicker sauce, mix water and cornstarch, add to the pan, and simmer 1–2 minutes. Turn off heat and stir in basil until wilted, about 30–60 seconds.

    Serve: Spoon spicy basil chicken into lettuce cups and eat immediately.
