Ingredients

  • 2 medium Zucchini
  • 1/4 tsp Salt
  • 1/4 cup All-purpose flour
  • 1 large Egg
  • 1/2 tsp Garlic powder
  • 1/4 tsp Black pepper
  • 2 tbsp Olive oil
  • 1/2 cup Plain Greek yogurt
  • 1 clove Garlic
  • 1 tbsp Lemon juice
  • 1 tbsp Fresh parsley (optional)(optional)

Instructions

    Prep (15 minutes): Grate the zucchini, then place it in a clean towel and squeeze out excess moisture. In a bowl, mix zucchini with salt, flour, egg, garlic powder, and black pepper.

    Cook (15 minutes): Heat olive oil in a nonstick skillet over medium-high heat. Scoop small mounds of batter into the pan and flatten slightly. Cook 3–4 minutes per side until golden and cooked through, adding a little more oil if needed.

    Make the sauce (during cooking): Stir Greek yogurt with finely grated garlic and lemon juice (and parsley if using). Taste and adjust with a pinch of salt if desired.

    Serve: Plate the fritters and serve warm with the garlic yogurt sauce.
