Ingredients

  • 2 small boneless, skinless chicken breast
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes
  • 6 oz fresh mozzarella
  • 0.25 cup fresh basil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey(optional)
  • 1 clove garlic(optional)

Instructions

    Prep (15 minutes): Pat chicken dry and season both sides with salt and black pepper. Halve cherry tomatoes. Tear or chop basil. Slice mozzarella.

    Cook (20 minutes): Heat 1 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook 5–7 minutes per side until browned and cooked through (165°F/74°C). Transfer to a plate.

    In the same skillet, add the remaining 1 tbsp olive oil. Add tomatoes (and garlic if using) and cook 3–4 minutes until they begin to blister and soften.

    Return chicken to the skillet. Top with mozzarella and cover for 2–3 minutes until melted.

    Finish: Stir balsamic vinegar with honey (if using) and drizzle over the chicken and tomatoes. Top with basil and serve.
