Ingredients

  • 2 lbs Lamb shoulder, thinly sliced
  • 0.25 cup Olive oil
  • 2 tbsp Lemon juice
  • 4 pieces Garlic cloves, minced
  • 1 tbsp Ground cumin
  • 1 tbsp Ground coriander
  • 1 tsp Smoked paprika
  • 0.5 tsp Ground turmeric
  • 0.25 tsp Ground cinnamon
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Tahini sauce for serving(optional)

Instructions

    In a large bowl, whisk together the olive oil, lemon juice, minced garlic, and all the dry spices.

    Add the thinly sliced lamb to the marinade and toss thoroughly to ensure every piece is coated.

    Cover and refrigerate for at least 2 hours, though overnight is preferred for maximum flavor.

    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    Spread the lamb slices in a single layer on the baking sheet to ensure even browning.

    Roast for 25-30 minutes, tossing halfway through, until the edges are crispy and charred.

    Remove from the oven and let the meat rest for 5 minutes to retain its juices.

    Serve hot inside warm pita bread with tahini, sliced onions, and fresh parsley.
