Ingredients

  • 180 g Spaghetti (or linguine)
  • 1 small Cucumber
  • 2 stalks Scallions
  • 1 tbsp Sesame oil
  • 3 tbsp Soy sauce
  • 1 tbsp Rice vinegar (or apple cider vinegar)
  • 1 tsp Honey (or sugar)
  • 1 tsp Fresh ginger, grated
  • 1 clove Garlic, grated(optional)
  • 1 tbsp Toasted sesame seeds
  • 1 tsp Neutral oil (for pasta water)(optional)

Instructions

    Bring a pot of salted water to a boil. Cook the spaghetti until al dente, about 8–10 minutes. Drain and rinse briefly under cold water to chill.

    While the pasta cooks, thinly slice the cucumber and thinly slice the scallions. Set aside.

    In a bowl, whisk sesame oil, soy sauce, rice vinegar, honey, grated ginger, and (if using) grated garlic. Stir in toasted sesame seeds.

    Toss the chilled pasta with the dressing until evenly coated. Add cucumber and scallions and toss again.

    Serve immediately, or chill 5–10 minutes for extra refreshment.
