Ingredients

  • 200 g pasta
  • 250 g frozen mixed vegetables
  • 0.5 medium onion
  • 1 clove garlic
  • 2 tbsp cooking oil
  • 3 tbsp soy sauce
  • 1 tsp vinegar(optional)
  • 0.25 cup water
  • 2 eggs
  • 0.25 tsp salt(optional)
  • 0.25 tsp black pepper(optional)

Instructions

    Cook pasta in salted water until just under al dente. Drain and rinse quickly; set aside to dry 5 minutes.

    Heat oil in a wok or large skillet until very hot. Sauté onion and garlic 30–45 seconds.

    Add frozen mixed vegetables; stir-fry until hot and mostly dry (5–7 minutes).

    Push vegetables aside. Crack eggs into the empty space and scramble quickly, then mix into vegetables.

    Add pasta. Pour in soy sauce and water; toss vigorously to coat. Cook 3–4 minutes until slightly caramelized.

    Finish with vinegar (optional) and black pepper. Serve hot.
