Ingredients

  • 2 pieces chicken cutlets (thinly sliced chicken breast)
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cloves garlic
  • 1 large lemon (zest + juice)
  • 2 tbsp fresh parsley
  • 1 tsp fresh thyme(optional)
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter(optional)
  • 0.5 cup chicken broth
  • 1 tbsp all-purpose flour(optional)

Instructions

    Prep (10 minutes): Pat chicken cutlets dry and season with salt and black pepper. Mince garlic. Zest and juice the lemon. Chop parsley (and thyme if using).

    Cook (15 minutes): Heat olive oil in a large skillet over medium-high heat. If using flour, lightly dust chicken with it. Sear chicken 3–4 minutes per side until cooked through and browned; transfer to a plate.

    In the same skillet, reduce heat to medium. Add garlic and cook 30 seconds until fragrant. Stir in chicken broth and simmer 2–3 minutes to slightly reduce.

    Finish the sauce: Stir in butter (if using), lemon zest, and lemon juice. Add parsley (and thyme if using). Simmer 1 minute, then return chicken and spoon sauce over. Cook 30–60 seconds to reheat and coat, then serve.
