Ingredients
- 1 pound Ground lamb or beef (or a mix)
- 1 large Red onion, thinly sliced
- 3 cloves Garlic, minced
- 2 teaspoons Dried oregano
- 1 teaspoon Ground cumin
- 0.5 teaspoon Ground coriander
- 2 tablespoons Olive oil
- 4 pieces Pita bread rounds
- 0.5 cup Tzatziki sauce
- 1 cup Cherry tomatoes, halved
- 0.5 cup Cucumber, diced
- 0.25 cup Feta cheese, crumbled(optional)

Preheat your oven to 425°F (220°C) and lightly grease a large rimmed sheet pan with olive oil.

In a large bowl, combine the ground meat, minced garlic, oregano, cumin, coriander, salt, and pepper; mix thoroughly with your hands.

Press the meat mixture firmly into a thin, flat rectangle (about 1/2 inch thick) on one half of the sheet pan.

Toss the sliced red onions with olive oil and spread them across the other half of the sheet pan.

Roast in the oven for 15-20 minutes until the meat is cooked through and slightly browned on the edges.

Remove from the oven, drain any excess fat, and slice the meat into thin strips to mimic traditional rotisserie style.

Place the pita breads directly on top of the meat and onions for the last 2 minutes of oven time to warm them up.
