- 2 cups Chinese garlic chives (Jiu Cai), finely chopped
- 2 tablespoons Soy sauce
- 1 tablespoon Shaoxing rice wine
- 1 tablespoon Toasted sesame oil
- 1 tablespoon Fresh ginger, grated
- 0.5 teaspoon White pepper
- 0.5 teaspoon Salt
- 40 pieces Round dumpling wrappers
- 4 quarts Water (for sealing and boiling)

In a large mixing bowl, combine the ground pork, soy sauce, rice wine, sesame oil, ginger, white pepper, and salt.

Stir the pork mixture vigorously in one direction for 2-3 minutes until it becomes a sticky, cohesive paste.

Gently fold in the chopped garlic chives until evenly distributed throughout the meat.

Place a small spoonful of filling in the center of a dumpling wrapper.

Lightly moisten the edges of the wrapper with water, fold in half, and pleat the edges to seal tightly.

Bring a large pot of water to a rolling boil over high heat.

Carefully drop the dumplings into the water and cook until they float to the surface.

Once floating, add a half cup of cold water to the pot and bring back to a boil to ensure the pork is cooked through, then drain and serve.
