Ingredients
- 180 g spaghetti
- 3 cloves garlic
- 2 tbsp neutral oil (canola or vegetable)
- 3 tbsp shoyu (Japanese soy sauce)
- 1/4 cup pasta water
- 1/4 tsp chili flakes(optional)

Bring a pot of salted water to a boil and cook the spaghetti until al dente (about 10 minutes). Reserve 1/4 cup pasta water, then drain.

While the pasta cooks, mince the garlic. Heat the oil in a large skillet over medium-low heat and sauté the garlic until fragrant and lightly golden, about 2–3 minutes.

Add the drained pasta to the skillet. Pour in the shoyu and splash in the reserved pasta water. Toss well to coat and simmer briefly, about 5–7 minutes, until glossy and evenly sauced.

Taste and adjust with more shoyu if needed. Serve immediately, topping with chili flakes if using.
