Ingredients

  • 12 oz boneless, skinless chicken breast
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1.5 tbsp cornstarch
  • 2 tbsp neutral oil (canola/vegetable)
  • 0.33 cup ketchup
  • 3 tbsp rice vinegar (or white vinegar)
  • 0.5 cup pineapple chunks (canned, drained)
  • 1 tbsp soy sauce
  • 2 cloves garlic
  • 1 tsp ginger (fresh, grated)

Instructions

    Prep (10 minutes): Cut chicken into 1-inch bite-size pieces. Season with salt and pepper, then toss with cornstarch until lightly coated. Mince garlic and grate ginger.

    Cook (20 minutes): Heat oil in a large skillet over medium-high heat. Add chicken in a single layer (work in 2 batches if needed) and cook 4–6 minutes, turning until browned and cooked through.

    Make sauce and finish (20 minutes total): Reduce heat to medium. Add garlic and ginger to the skillet and stir for 30 seconds. Stir in ketchup, vinegar, soy sauce, and pineapple. Simmer 3–5 minutes, tossing to coat the chicken and let the sauce thicken.

    Serve: Taste and adjust seasoning if needed, then serve hot.
