Ingredients

  • 2 large Chicken Breasts
  • 0.5 cup All-purpose Flour
  • 2 large Eggs
  • 1 cup Panko Breadcrumbs
  • 0.5 cup Grated Parmesan Cheese
  • 2 cups Marinara Sauce
  • 1.5 cups Mozzarella Cheese
  • 0.25 cup Olive Oil
  • 1 handful Fresh Basil(optional)

Instructions

  1. 1

Preheat oven to 400°F (200°C). Slice chicken breasts in half lengthwise to create four thin cutlets.

  2. 2

Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mix of breadcrumbs and half the parmesan.

  3. 3

Dredge each chicken cutlet in flour, dip in egg, and coat thoroughly with the breadcrumb mixture.

  4. 4

Heat olive oil in a large oven-safe skillet over medium-high heat. Fry chicken for 3-4 minutes per side until golden brown.

  5. 5

Spread a thin layer of marinara sauce over the chicken, then top with mozzarella and the remaining parmesan.

  6. 6

Transfer the skillet to the oven and bake for 10-15 minutes until cheese is bubbly and chicken is cooked through.

  7. 7

Garnish with fresh basil and serve immediately.
