Ingredients

  • 180 g Pasta (penne or spaghetti)
  • 400 ml Coconut milk (unsweetened)
  • 10 g Curry leaves(optional)
  • 2 tsp Yellow curry powder
  • 1/2 tsp Turmeric powder
  • 1 tbsp Ginger (grated)
  • 2 cloves Garlic (minced)
  • 1/2 medium Onion (finely chopped)
  • 1 tbsp Vegetable oil
  • 1/2 tsp Salt
  • 1 tbsp Lime juice(optional)
  • 2 tbsp Fresh cilantro (chopped)(optional)

Instructions

    Bring a pot of salted water to a boil and cook the pasta until al dente (about 10 minutes). Reserve 1/2 cup pasta water, then drain.

    While the pasta cooks, heat oil in a pan over medium heat. Add onion and cook until softened, 3–4 minutes. Stir in ginger and garlic and cook for 30–60 seconds.

    Add curry powder and turmeric, then pour in coconut milk. Simmer gently for 8–10 minutes, stirring occasionally, until slightly thickened. Add curry leaves (if using) for the last 2 minutes.

    Add drained pasta to the coconut curry and toss to coat. If needed, loosen with a splash of reserved pasta water. Turn off heat, stir in lime juice (if using), and top with cilantro (if using). Serve immediately.
