Ingredients
- 200 g short pasta (penne or fusilli)
- 1 medium potatoes, peeled and diced
- 100 g cauliflower florets
- 50 g green peas (frozen)
- 2 tomatoes, chopped
- 1 small onion, finely chopped
- 2 tbsp butter
- 1 tsp cumin seeds
- 2 tsp Pav Bhaji masala
- 1 tbsp fresh lemon juice
- to taste salt
- 2 tbsp fresh cilantro, chopped(optional)

Cook the pasta in salted boiling water until al dente (about 8-10 minutes), then drain and set aside.

Meanwhile, in a large pan melt 1 tbsp butter over medium heat, add cumin seeds and let sizzle for 30 seconds, then add onion and sauté until translucent.

Add potatoes, cauliflower, peas, and tomatoes; stir in Pav Bhaji masala and salt; cover and cook, stirring occasionally, until vegetables are soft (about 10 minutes).

Mash the cooked vegetables with the remaining 1 tbsp butter and lemon juice to form a thick mash; adjust seasoning.

Combine the cooked pasta with the vegetable mash, toss gently to coat, and heat together for 2 minutes.
