Ingredients

  • 180 g Pasta (penne or spaghetti)
  • 2 tbsp Olive oil
  • 300 g Mixed vegetables (bell pepper, zucchini, broccoli, carrots)
  • 2 cloves Garlic
  • 0.5 tsp Red chili flakes(optional)
  • 1 tsp Dried oregano
  • 0.5 tsp Dried basil
  • 1 tbsp Lemon juice
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Grated Parmesan (optional)(optional)

Instructions

    Bring a pot of salted water to a boil. Cook the pasta according to package directions until al dente, then reserve about 1/2 cup pasta water and drain.

    While the pasta cooks, heat olive oil in a large pan over medium-high heat. Add garlic and chili flakes and stir for 30 seconds, then add the mixed vegetables and stir-fry for about 8–10 minutes until crisp-tender.

    Add oregano, basil, salt, and black pepper to the vegetables. Toss in the cooked pasta and add a splash of reserved pasta water to help coat everything in a light sauce.

    Turn off the heat and stir in lemon juice. If using, add Parmesan and toss once more. Serve immediately.
